Why Simple Cooking Matters

In Mikki’s Kitchen, the goal is to make home cooking accessible to everyone—no fancy appliances or expensive ingredients required. I believe nourishing food shouldn’t be complicated or costly.

I’m not a by-the-books kind of cook.

For me, cooking is all about creativity, fun, and experimentation. That’s why some recipes here don’t have rigid measurements—instead, you’ll find tips and suggestions to help you get the best out of your ingredients.

I also believe every recipe can be adapted to suit personal tastes and dietary needs.

I enjoy all kinds of food and love exploring new flavors, especially when traveling. What people eat tells a story about their culture, and that curiosity drives my cooking. Here, you’ll find a variety of recipes—meaty, vegetarian, vegan, and more—all adaptable to fit a healthy, balanced diet.

What Sparked My Passion for Home Cooking?

Food has always been a huge part of my life—all the women in my family are, in my eyes, masterchefs.

But if I had to name my biggest inspiration, it would be my grandmother. I’ve never met anyone who can master different cuisines, even ones she’s never tasted before, the way she does. 

She’s what some might call old-school Danish, known for hearty, creamy, traditional dishes. But that’s not the full story—despite being all about meat, she somehow makes the best quinoa veggie patties. Go figure, haha!

The Early Days of Mikki’s Kitchen: From Bread to Real Meals

I grew up in a very liberal household without many expectations placed on me, and truth be told, I didn’t start cooking until I moved out at 18. If I can give myself credit for anything, though, it’s that I was already a pretty great baker by then—I loved making bread and cakes for my family as a kid.

Leaving home at a young age meant I had to figure out how to feed myself, and I refused to rely on ultra-processed foods or cup noodles like so many do. 

My passion for home cooking really started as a necessity—learning to make real food now that I wasn’t living under my mum’s roof. I’m still learning, but I’ve come a long way by embracing a learning-by-doing approach.

I couldn’t cook at all when I started, but here we are—almost 10 years later.

Balancing Food and Learning to Live with Desire

I think a lot of people can relate to having a complicated relationship with food. It’s essential for survival, but it can also become something else entirely—leading to either binge eating or barely eating at all.

Navigating Body Image and Diet Culture

Being born in the late ’90s, I grew up surrounded by constantly shifting beauty standards—everything from the size 0 craze to the near-glorification of obesity. Everyone should do what feels right for them, but for me, finding a healthy relationship with food has been a challenge.

I love food, and I’m definitely someone who lives to eat rather than just eats to live. That passion, however, has led to a cycle of yo-yo dieting throughout my life.

At my heaviest, I reached nearly 100 kilograms, and at my lowest, I was on the verge of becoming too slim.

End-Game: A Promise of a Healthy Life to Myself

My journey to promising myself I’d never return to obesity has been bittersweet. 

A Promise Born from Loss

I lost my dear cat and best friend, Oreo, in an instant. It shattered my heart into a million pieces, but somehow, through that grief, I made a promise—to her and to myself—to take care of me just as well as I took care of her.

That moment became a turning point in my life—one I reflect on more deeply in Turning Pain Into Power.

And from that moment on, I never looked back.

The Power of Finding Balance

After years of struggling, I realized that too much of anything—food, social media, even training—can be just as harmful as too little. 

Finding balance wasn’t about restriction; it was about being intentional with my habits and daily structure. That’s what has allowed me to eat freely, without guilt, while maintaining a healthy weight.

Some days I eat a little more, some days a little less—but what truly matters is the bigger picture.

I hope that by sharing a piece of my story, I can inspire you to start taking care of yourself, beginning with something as simple as cooking more meals at home.
